Hello all! It’s Thursday and we are well over the three-day weekend. But Memorial Day brings many more summer days, nights and weekends. There is nothing more synonymous with summer than a good grill out. I know my boyfriend and I have already grilled out 4 or 5 times already.
I keep trying to get creative in the grill so I’m not stuck eating variations of veggie or tuna burgers. I have made some grilled vegetables and even pizza, but I really wanted to try cedar wrapped salmon. You can buy cedar wraps and planks at any grocery store and some hardware stores. They even make seasoned wraps.
I got some cedar planks and some cedar wraps and decided to go with the cedar wraps for this recipe. I’ll save the planks for another day. I made some very easy and very healthy cedar wrapped salmon for a Memorial Day cook out. I made them myself and had Patrick grill them for me, since he’s the grillmaster.
Ingredients
1/2 cup olive oil
Juice from one lemon
1 tbs dried dill weed
1 tbs garlic puree
Salt and Pepper
2-3 pieces salmon fillet
2 or 3 cedar wraps (one per fillet)
Directions
Mix olive oil, lemon, garlic, dill and salt and pepper in a small bowl and whisk. Pour over salmon fillets and let marinate for 30 minutes in the refrigerator. Meanwhile soak the cedar wraps and twine in a large bowl of water for 5 minutes. Wraps should be fully submerged.
Remove wraps and lay on flat surface. Place one salmon fillet on a single cedar wrap. Place in the center and fold over the sides over the center. Once wrapped, wrap the twine around the center and tie in a single bow.
Place salmon wraps on heated charcoal grill. Cook on covered grill for 5-6 minutes on each side. It’s hard to keep an exact time on these, especially when entertaining.
Once done, remove twine and cedar wrapping with scissors. Cut down the center and peel away the wraps.
Eat and enjoy!
