It is always hard for me to have the time to go shopping for fresh produce. Finding recipes that make sense for two people is also a struggle. While I understand you can always split a recipe in half, I like when it is laid out for me! Here is a simple yet tasty appetizer and/or meal that you can make in little to no time and also grill during summer! Recipe serves serves 2-3 making 6 jalapenos total.
What you Need:
6 jalapenos (try to get as big as possible without bruises)
1/4 cup of cream cheese (I used garden vegetable for some flavor)
1/4 cup Mexican cheese
4 slices of thick smoked bacon
2 tablespoons of green onions, chopped
Bread Crumbs (optional)
What to do:
1.Put 4 strips of bacon on the skillet and cook until crispy
2.While the bacon is cooking, cut the stems off the jalapenos and core them. Make sure 99% of the seeds are out or they are going to be spicy as hell!
3. Add cream cheese, green onions and mexican cheese all together in a small bowl.
4.Once the bacon is done put it in a seperate bowl and crunch it up into small pieces. Once it is cooled off, add to your cream cheese mix.
5.Add the cream cheese mixture to the inside of the jalapenos. If you can’t get to the bottom with a spoon, feel free to use your hand.
Optional: Add bread crumbs to the top of the jalapenos for a little crispyness
6.Put jalapenos on the grill. Try to prop them up so the yummy goodness stays inside and becomes crispy on the tinfoil!
7.Cook for about 8-10 minutes on each site. This will depend on how hot your grill gets so keep an eye on them. (We used a coal grill)
Serve alongside burgers or brats or any other grill time food!
