I know, I know, I had you at marshmallow butter. It’s one of the best things you can put on pastries or fruit. I mean it’s not just for rice krispie treats guys.
I had a hella busy week and even busier weekend but I still snuck in time to make these cute little hand pies as a treat. It was easy to prepare once I made the dough. So, if you want to speed this recipe up, make the dough ahead of time or, just buy it. I mean no one will know the difference, it’s like buying a graham cracker crust and making one; it tastes the same.
I know a pie traditionally needs no topping, except maybe some whipped cream. I had an urge to combine marshmallow and some sort of pastry with fruit and so, here we are. Enjoy!
Ingredients:
2 3/4 cup all purpose flour
1/4 cup softened butter
1 large glass cold water
1 large apple, peeled and minced
1 tablespoon powdered sugar
1 tablespoon ground cinnamon
1 teaspoon nutmeg
2 tablespoons Fluff
1 tablespoon butter
Directions:
Preheat oven to 375
To prepare dough, sift flour into a mound on a clean surface (the counter or a large cutting board will do). Make a hole in the center and add butter. Use your hands and combine softened butter with flour. Once butter has blended with flour, add a few tablespoons of water to knead. Continue to add water until dough is well combined. Knead well. (Like really knead it, don’t half ass this). Wrap in saran wrap and set in fridge for one hour.
Meanwhile combine minced apple with powdered sugar, cinnamon and nutmeg. Stir well and set aside.
Take dough out of fridge and lay out on non-stick surface. With a rolling pin, roll it as thin as you can. Use a upside down drinking glass to press into the dough. You should be able to get 20 circles in as long as the dough is rolled thin enough.
Once circles are made, lay them out on a greased baking pan. Put one spoonful choppped apple mixture into one circle and place another rolled out circle on top. Press around the edges with a fork to seal. All ten apple pies should fit on one pan. Bake for 25 minutes until pies are a golden color.
When pies are done and are set out to cool, add marshmallow fluff and butter into a microwave safe container. Heat for 20 seconds and remove. Use a small metal whisk and whisk butter and fluff until smooth. Top each mini pie with one dollop of marhsmallow butter. The butter will melt down the sides. Serve immediately.
