I hope you guys have a mini donut maker, otherwise you are missing out on these delicious gifts from the donuts Gods. I got my mini donut maker a few years ago for Christmas and it’s still going strong. The Bella Cucina Mini Donut Maker was truly the gift that keeps on giving.
It’s also not hard to find recipes for mini donuts because it doesn’t vary much from regular donuts, but they do bake a lot faster!
This recipe was inspired by fall. I love the taste of a crumble cinnamon cake and I wanted something similar with a sweet touch. The maple glaze gives it a perfect fall sweetness and the honey helps give it a hearty cake flavor. I loved these donuts, so hopefully you will too!
Ingredients:
For Donuts:
1 1/8 cups all-purpose flour
1 cup sugar
1 tsp baking powder
1/2 tsp salt
4 eggs
1 1/2 tablespoon honey
1 1/4 cup coconut oil (softened)
1 tablespoon ground cinnamon
1/2 tablespoon nutmeg
For Glaze:
1 cup confectioners sugar
2 tablespoon vanilla almond milk
1 tablespoon maple syrup
1 teaspoon ground cinnamon
Directions:
1. Turn on mini donut maker and spray with non-stick cooking oil.
2.In a large bowl combine flour, sugar, salt and bakng powder. Stir well
3.Use a hand mixer and add eggs to mixture. Slowly add honey and then coconut oil. *Coconut oil should be melted or very softened so it combines well.
4.Once well combined, pour half the mixture into a seperate bowl with cinnamon and nutmeg. Mix well. If the batter is too thick, add 1/2 cup liquid coconut oil or vegetable oil.
5.Pour both mixtures into ziploc bags and snip the corner of the bags to create a piping bag.
6.Add half honey mixture and half cinnamon mixture to each side of the donut. You can do one side honey, one side cinnamon or layer the flavors.
7.Cook according to mini donut make directions and remove
To make Glaze:
Whisk together all ingredients and top over cooled mini donuts.
Makes about 50 mini donuts. Enjoy!
Here you can see the two different batters, one honey and one cinnamon. The fun part is layering the flavors to make a fun flavor in the donut. Do not over fill the donut maker though, the donuts will not cook evenly.
As you can see I tried a few different ways to combine the two batters. I did try to stir them to make a marble, but the donut maker starts baking too fast to mix the batters once they are in there. I found the best way was to pipe in the honey batter in a thin circle and then pipe in the cinnamon batter over it.
I made these and brought them to work to share, but I admit I ate most of them myself.
